Any-noodle Arrabiatta

Use any noodle. I’ve made this with Penne, Spaghetti, Tagliatelle and even fresh pasta on several occasions. Play around add see what you like best!

🌶️ Ingredients

1. Pasta

2. Onions (tiny)

3. Tomatoes (many)

3. Garlic (enough)

4. Chillies

5. Basil

I prefer dried whole chillies as you have the flexibility to remove them while cooking/eating but chilli flakes work great too!

🪄 Sauce

1. Prep the garlic, chillies, and basil stems and have them ready to go.

2. Grab a pan and add some olive oil followed by the 3 ingredients above and let them cook for a little bit.

3. Add the onion and let it sweat, I like to add some salt at this point.

4. Go in with the tomatoes.

5. Once the tomatoes have cooked for a few minutes, crush them, mix things up and cover and cook for 20-ish.

🥘 Bringing it together

1. Cook your pasta till al dente.

2. Transfer the noods to the pan with the sauce reserving some pasta water.

3. Bring it all together and use the pasta water if required.

4. Add some butter + fresh basil to finish.

5. Add salt + pepper to taste.

🗒️ Notes

1. Remove the basil stems before serving.

2. The dish will get spicier over time so if you feel like it’s getting too spicy, you can also remove the chillies after a point.

3. If you want some umami, feel free to add anchovies when making the sauce. (yes, thank you, David)
