240g canned Chickpeas

60-ish grams of Tahini

Lemon juice (start with half a lemon)

1 clove of Garlic

20-ish grams of Olive Oil
-
2-4 grams of Salt
🧑🍳 The how

Start by draining the liquid from your canned chickpeas and rinsing them under cold water.

As you rinse them, you want to be a bit rough and get rid of the skins. This is VERY important. The more the skins, the less smooth your hummus is.

Add everything to your food processor (or blender) and process (or blend).

I like to add the ice cubes incrementally to both introduce water and cool things down.

You'll need some patience here as it'll take a couple of minutes (depending on how powerful your machine is) for everything to come together and reach a smooth consistency.

Taste as you and adjust the lemon juice, olive oil and salt.

It is super important that you remove as much of the skins as possible while you rinse your chickpeas.

Your hummus will probably thicken up a bit in the fridge so maybe account for that before you finish.
