🍨 Oat milk ice cream base

🛒 The ingredients

  • 200g sugar

  • 85g of light corn syrup

    • If you can't find this, you can substitute it with 65g of additional sugar instead

  • 240g water

  • 480g oat milk

  • 1.5g or 1/2tsp of Xanthan Gum

    • Don't be scared of the X in there. This should be easy to find and replaces eggs which are in basically every ice cream recipe.

🧑‍🍳 The how

  • Grab a saucepan

  • Add your sugar and the xanthan gum and mix to combine

  • Add the corn syrup (if you're using it)

  • Add the water

  • Whisk everything together over low heat. We aren't trying to hit a temperature here, what we're looking for is for everything to come together.

  • Once everything is combined, turn off the heat and add the oat milk

🗒️ Notes

  • You should end up with around 1L of ice cream base. It can be stored in the fridge for 3 days and in the freezer for 2-3 weeks.

  • Ideally, let it rest and really cool down for 6-12h before using it for best results!
